Baked Eggs with Goat cheese & Cherry Tomatoes

Try this recipe for a healthy and fabulous breakfast.


For 4 servings:

1/2 lbs soft goat cheese

4 eggs

8 slices italian spec

5 mushrooms

12 cherry tomatoes, baked

1 tablespoon finely chopped fresh basil

Salt and freshly ground black pepper


1Preheat the oven to 350F.

2Place the cherry tomatoes and mushrooms onto the glazed ceramic bowl, sprinkle with olive oil, salt and freshly ground black pepper to taste. Mix well and roast in the oven for 15 min. Add slice of goat cheese, line with a slice of ham. Add another slice of goat cheese and drizzle over some olive oil. Add 2 tablespoons tomato juice per dish. Bake in the oven for 10 min and then crack 1 egg. Continue cooking until egg is done as you like it.

3Season with freshly chopped basil.
