1Cut the green tomatoes to 3/4" thick pieces. Place them In a deep baking pan and cover them evenly with the sugar. Leave it overnight. The tomato juice will turn the sugar into syrup.
2Preheat the oven to 150F.
3Add to the tomato mix the juice of the freshly squeezed lemons and the diced lemon peel and stir in the water.
4Bake it for 2 .5 hours and add the walnuts. As a kid I was eating only the nuts so my mom doubled the walnut portion. Bake it for another hour to hour and a half, or until the syrup thicken. Taste it by dripping some of the syrup in a glass with water. If the drop gets to the bottom on the glass without diluting, the confiture it is ready.
5The Green Tomatoes - walnuts confiture is great with any cheese.
6For Pairing with Brie - Trim the outside of the brie. Place the brie in a mixing bowl and whisk for 10 minutes, until gets airy and extra creamy.
7Serve the confiture with one scoop of the whipped brie with some crispy baguette thin slices.
