1In a mixing bowl combine the garlic cloves with cilantro, red chilli peppers,ginger, olive oil, coconut meat and water and the juice of 1 lime. Season it with salt to taste. Add the shrimp and marinate for 15 minutes.
2Grill the shrimp over high heat in a banana leaf until cooked, about 5 minutes.
3Serve them with chilled pineapple salsa.
