Macadamia Fish & Chips

Mahi-Mahi, also known as dorado, is thin-skinned fish with firm, light pink flesh. It has delicate, slightly sweet flavor.

Ingredients

1 lb mahi-mahi

1 scallion, thinly diced

1 tablespoon fresh parsley, diced

¼ cup macadamia nuts, finely crushed

¼ cup panko breadcrumbs

1/4 cup flour

1 teaspoon salt

1/2 teaspoon pepper

1 egg

1 tablespoon milk

Olive oil for frying

Directions

1Cut the mahi-mahi to ½” wide 5”long pieces.

2Mix together the flour, scallions,diced parsley, macadamia, panko and the milk, then fold in the whisked egg. Turn up the heat of the oil to 350 degrees F. Dip the fish in the batter and fry for a few minutes with the chips until golden brown.

3Mix the flour, seas salt and freshly ground black pepper.

4Mix milk and egg.

5Mince scallions, parsley and macadamia nuts and mix with panko crumbs.

6Place the three mixtures on separate flat plates.

7Dip each piece of mahi mahi in flour, then in milk mixture, then in the macadamia mix.

8Turn up the heat of the oil to 350 degrees F. Dip the fish in the batter and fry for a few minutes with the chips until golden brown.

9Serve with chips.
