Broccoli Salad with Parmesan Dressing

Broccoli bulb

½ cup extra virgin olive oil

freshly squeezed juice of 2 meyer lemons

½ finely shredded parmesan cheese

½ teaspoon freshly ground black pepper

Pan roasted sliced blanched almonds


1Cut the broccoli to small florets.

2In a Vitamix Blender combine the olive oil with freshly squeezed lemon juice, parmesan cheese and the black pepper. Secure the lid. Turn machine on Variable, 6 for 30 seconds to make the dressing.

3In a big bowl combine the broccoli florets with the parmesan dressing. Mix well until all the florets are well coated.

4Serve the salad with pan roasted almonds.
