Buhti was a favorite breakfast. My cousin liked them with sour cherry jam, my brother with apricot jam. I like them dipped in honey.


6 oz. yogurt

4 oz. sour cream

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon sugar

2 cups flour


1In a glass-mixing bowl combine the yogurt with sour cream. Add 1 teaspoon baking soda and mix well. Let it rest for 10 min.

2In a separate bowl whisk the egg with the salt and sugar. Add it to the yogurt mixture.

3On your working surface make a well with the 1 1/2 cups flour. Slowly add the egg – yogurt mixture stirring with your 4 fingers pressed to each other, forming the shape of a large spoon, in a circular movement. Add the other ½ cup with flour, mix quickly until the dough is homogenous and doesn’t stick to the working surface. Knead the dough by pressing it with the heels of your hands.

4Once ready the dough shouldn’t be hard. Make a ball and let it rest for 20 min.

5Dust the clean working surface with some flour and with the help of flour-dusted rolling pin roll over the dough ball until your get a flat dough surface ½” thick. Transfer it to a wood cutting board and with a knife slice it to diamond shapes 2” x 2”.

6In a deep pot over medium heat warm the 3“ of olive oil. When oil gets very hot add the diamond shaped dough pieces and fry both sides until golden brown.

7Serve them dusted with confection sugar, honey or your favorite jam on a side.
