Guveche – Baked Eggs with Feta and Oven-roasted Tomatoes

For 4 servings:

1 lbs Bulgarian Feta cheese

4 eggs

8 slices ¼” thick ham

1 julienned (cut into stripes) roasted red bell pepper

5 mushrooms

12 cherry tomatoes

1 tablespoon finely chopped parsley

Salt and freshly ground black pepper


1Preheat the oven to 350F.

2Place the cherry tomatoes and mushrooms onto the glazed ceramic bowl, sprinkle with olive oil, salt , pinch of sugar and freshly ground black pepper to taste. Mix well and roast in the oven for 15 min. Add slice of feta, line with a slice of ham. Add another slice of feta, as well as chopped roasted red pepper.

3Pour some olive oil and season with black pepper. Add 4 tablespoons water per dish. Bake in the oven for 10 min and then crack 1 egg. Continue cooking until egg is done as you like it.

4Season with freshly chopped parsley.
