Mexican Shrimp Cocktail

Ingredients

FOR GRILLED SHRIMP

8 jumbo shrimp

2 garlic cloves, finely diced

1 tablespoon cilantro, finely diced

1 tablespoon parsley, finely diced

1 tablespoon olive oil

juice of 1 lime

FOR RAINBOW SALSA

juice of 2 limes

1/2 small size red onion, finely diced

2 tablespoons poblano chilies, seeded and finely diced

½ red pepper, seeded and finely diced

2 tablespoons cilantro, chopped

½ lbs mixed tomatoes - red, yellow, green, purple

Directions

1In a mixing bowl combine the garlic cloves with cilantro, parsley,1 tablespoon olive oil and the juice of 1 lime. Season it with salt to taste. Add the shrimp and marinate for 15 minutes.

2To make the salsa combine the rest of the ingredients. Gently mix them and leave the mixture in the refrigerator until ready to serve.

3Grill the shrimp over high heat. Serve them with chilled salsa.
