Thai Salad

The secret of this salad is to use a slicing mandolin. Don’t be afraid to be generous with the cilantro. It tastes delicious.


½ red cabbage, finely chopped in strips

½ green cabbage, finely chopped in strips

1 stalk celery, finely chopped

3 tablespoon fresh cilantro, finely minced

1 hot red chili pepper, finely minced

1 teaspoon salt or to taste

1 tablespoons extra virgin olive oil

2 tablespoons sesame oil

1 tablespoon apple vinegar

½ peanuts, finely diced


1Using Japanese mandolin finely chop the cabbage.

2Mix all the ingredients above, without the peanuts, in a large bowl and press with hands for a minute to make the cabbage soft.

3Before serving add the peanuts, mix well and it ready to be served.
